    Egg Bhurji is the Indian answer to scrambled eggs – but much more flavorful. It uses onions, tomatoes, green chilies, and aromatic spices to transform simple eggs into a protein-packed meal.

    Ingredients

    • 3 Whole Eggs
    • 1 small Onion – Chopped
    • 1 small Tomato – Chopped
    • 1 Green Chili – Chopped
    • 1/4 tsp Turmeric Powder
    • 1/2 tsp Red Chili Powder
    • 1 tsp Oil or Butter
    • Coriander leaves
    • Salt and Pepper

    Instructions

    1. Whisk Eggs: Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk lightly.
    2. Sauté Veggies: Heat oil in a non-stick pan. sauté onions and chilies until soft. Add tomatoes and cook for 2 minutes.
    3. Spice it up: Add turmeric and red chili powder. Mix well.
    4. Scramble: Pour the whisked eggs into the pan. Stir continuously on medium heat. The eggs will start to cook and form soft curds.
    5. Finish: Cook until the eggs are set but still moist (bhurji shouldn't be dry). Turn off the heat.
    6. Garnish: Top with fresh coriander.
    7. Serve: Eat with toasted brown bread or multigrain roti.

    Tips

    • Add chopped bell peppers or spinach to increase volume and fiber without many calories.
    • Use 2 whole eggs + 3 egg whites to increase protein while keeping fats lower.
