    This recipe replicates the flavors of a highway dhaba (roadside eatery) using simple spices. It turns simple boiled eggs into a rich, protein-filled main course.

    Ingredients

    • 4 Whole Eggs – Hard-boiled and peeled
    • 2 Onions – Finely chopped
    • 2 Tomatoes – Pureed
    • 1 tsp Ginger-Garlic Paste
    • 1/2 tsp Turmeric
    • 1 tsp Kashmiri Red Chili Powder (for color)
    • 1 tsp Dhaniya (Coriander) Powder
    • 1/2 tsp Garam Masala
    • 1 tbsp Oil

    Instructions

    1. Prep Eggs: Make shallow cuts on the boiled eggs. Sauté them in a pan with a pinch of turmeric and chili powder until golden. Remove and set aside.
    2. Make Masala: In the same pan, heat oil. Add cumin seeds and chopped onions. Fry until golden brown.
    3. Add Paste: Add ginger-garlic paste and cook for minute.
    4. Tomatoes & Spices: Add tomato puree, turmeric, chili powder, and coriander powder. Cook until oil separates.
    5. Gravy: Add a cup of water to make the gravy consistency. Bring to a boil.
    6. Combine: Gently drop the fried eggs into the gravy. Simmer for 5 minutes.
    7. Garnish: Finish with garam masala and coriander.
    8. Serve: Perfect with Jeera Rice or Tandoori Roti.
