Prepare Batter: Drain the soaked moong dal. Grind it together with spinach, ginger, green chilies, and a little water to form a smooth batter. It should be of pouring consistency like Dosa batter.
Season: Transfer batter to a bowl. Add salt, cumin seeds, and hing. Mix well.
Heat Pan: Heat a non-stick tawa or skillet. Grease lightly with oil.
Pour: Pour a ladle full of batter and spread it in a circular motion to make a thin cheela.
Cook: Drizzle a few drops of oil around the edges. Cook on medium heat until the base turns golden brown and crispy.
Flip: Flip and cook the other side for 1-2 minutes.
Stuff (Optional): For extra protein, grate paneer inside the cheela before folding.
Serve: Serve hot with green mint chutney or curd.
